A simple search on line will give you several sources for plastic models of many submarines from many countries. But you should choose a scale that suits your tabletop space. If you have access to an 8'x6' table you might want to consider larger plastic models for their detail. However, if you want a wide selection of subs and surface ships that are all of the same scale, and you don't have that much space, you might consider Bill's Bits & Pieces on shapeways. He offers both 1:1800 and 1:2400 scales with quite a selection of models. You can access Bill's list here:

I've chosen the 1:1800 scale, but it is up to each individual.
You will notice in the rules that all movement is in MU (Movement Units). I use 1' = 1 MU for my 1800 scale. I'd go to 1/2" - 1 MU at 1:2400. I have never played the larger scales, but I know they used 1:600 models in the Conn...Sonar! game my brother played at the last Enfilade convention (2019). They had a large table space that was around 8'x6'.

We went to a rental in Easter Washington to celebrate our 51st Anniversary. Bottom line is that we had a good time. Highlights: Beautiful place and views. Access to a very nice stream on a private beach. Coming home, about 11:15am, when we were passing Keechelus Lake (just below the summit of Snoqualmie Pass), we heard what I at first throught was a very loud truck overtaking us, but could not see it in my mirrors. But looking out the left window of the car I saw what I think was an F-18 flying about 50' above our altitude, (or about 150' above the lake level) around 50 yards off to my left! This was followed by two more of the same type planes rolling just like in the video you see of them to make their turns. Total of three of them following the terrain. Cool!!! I haven't seen them in real life doing that, but it is so impressive.
